I really like using coconut oil or coconut milk (full fat) when I can. I know; it sounds horrible to those of us who have been told all saturated fat is bad. But coconut oil is actually wonderful.

Coconut oil is rich in lauric acid, a medium chain fatty acid. Medium chain fatty acids are metabolized by the body as energy more readily than long chain fatty acids, which are generally stored as fat. Lauric acid is also believed to have antimicrobial and antiviral properties (it’s also found in breast milk).

Coconut oil is a very heat stable oil due to its saturated fat content and resists oxidation during cooking. Most of the other vegetable oils we use oxidize quickly during cooking, producing free radicals that are thought to be dangerous to our health.

Wilderness Family Naturals carries high quality coconut oil at a reasonable price, especially if you get some friends together and buy a case at a discount. You can probably find cans of coconut milk at a much more reasonable price at an Asian market or grocery store.

1 can of coconut milk measures out to about 1 3/4 cups. After you open a can, place the unused portion of coconut milk in a covered container in the refrigerator for up to 1 week.

    • Thank you aunt judy! Either Stuart or I always manage to be at home with the boys while the other is at class, and we do homework during naps and in the late night hours. It’s a good thing we like to study! We wish you were here too. 🙂
